I read recently that there’s a shortage of cauliflower because it’s become so popular on the U.S. food scene. I don’t know what took everybody so long. Roasted, it has a nutty-sweet flavor that is a perfect side for pretty much any meal, and when it’s coming straight from the garden and is the perfect purple color of that weird dinosaur that has recently made it back into our lives because of the baby (and thanks to Netflix), it’s phenomenal. It’s also a favorite among carb watchers because it’s a great substitute for rice and potatoes. I’ve even made a pizza crust out of it, and you don’t miss a thing. Sometimes I’ll just roast the whole head on a Monday and snack on it during the first few days of the week.
